I hope everyone has been having a great summer. We’ve been blessed with some delicious organic peaches this year, which have been one of the highlights of the season.
While there’s not much better than eating a fresh juicy peach, this nice cream bowl is so refreshing and an indulgent treat as we enjoy the last few weeks of warmer weather.
If you’ve never heard of nice cream before, it’s simply a plant-based version of ice cream made by blending frozen fruit into a soft-serve consistency. It satisfies a craving for ice cream but is a super-healthy alternative.
I love this recipe because it is creamy and decadent and doesn’t require bananas. Most fruit-based ice creams use banana as the base, so this is an option if you want something a bit lighter and easier to digest, or if you just don’t like the flavor of banana.
When at all possible I recommend freezing your own peaches for this recipe if you are able to find some perfectly sweet and ripe ones where you live. Store-bought frozen peaches will never have as much flavor as they are most certainly picked early before the fruit has had the opportunity to reach its peak of ripeness.
If that is your only option then you may need to add some extra sweetness to this recipe to taste, such as raw honey, maple syrup or stevia. You could also do a 50/50 blend of banana and peach.
To make it creamy without using banana I used a combination of coconut water and coconut yogurt. I’ve also made it with a blend of coconut water and coconut milk and it worked well.
I included one of my favorite plant-based proteins – the Salted Maca Caramel from Vivo Life. I really like the flavor of this protein in smoothie bowls and banana ice cream and it also adds to the creamy texture.
Most of the time I actually enjoy this without anything added. It’s so good that I’ve already had it for breakfast twice this week! It digests easily yet keeps me going for hours. It’s a perfect post-workout meal on a hot summer day.
If you are feeling like something a bit more substantial it also makes for a wonderful smoothie bowl. You can top it with whatever fruit is in season – extra sliced peaches would be my top choice – along with your favorite superfood toppings. Here is one that I made with bee pollen and coconut flakes.
The contrast between the fresh juicy peaches, creamy nice cream, and crunchy toppings is so satisfying!
- 3 cups frozen sliced peaches
- ½ cup coconut water
- 2 tablespoons coconut yogurt
- ½ scoop Vivo Life Salted Maca Caramel protein powder
- Add all ingredients to a high-speed blender.
- Blend until smooth and creamy,
- If necessary to facilitate blending add extra coconut water.
- Serve immediately.
